ok, this is difficult although i'm maltese, but i dont cook at home. you can try searching for a rabbit stew receipe, or pizza the gozitan way, ie with big circled potatos and big tomatos on top, then you can try doing the ';kawlata'; ie, take a maltese sausage and put it to boil with carrots, potatos, and all the vegetables you have left in your fridge. you also try doing some good dessert, like the ';prinjolata'; which is actually for carnival but it is DELICIOUS, you are to take biscuits and little plain sponge and cut it to small pieces and then add pieces of chocolate, cherries and sugar and mix everything and let them settle together until it becomes consistant, ie it takes a shape which must look like a little hill lol then cover it all with vanilla icing and then put lines of chocolate and cherries on top... and eat, wow mmmmmmmmm!!!!

I am Maltese and their food is very hard to come by. I recently watched this show in Australia that explored the different foods of a variety of teh cultures that make up this wonderful country. So I am passing you on a link to it. Click on Cuisine then use the drop down selection, and you will find a few Maltese recipes. They are both written and videoed.I reccomend both the bragioli and the rabbit recipe. They remind me of the time I spent in Malta. I hope that this helps.
Maltese Almond Cakes (Kwaresimal For Lent) Recipe
Ingredients
1 1/8 cup almonds, slivered, blanched 10 oz
3 1/2 cup flour, sifted
1 1/2 cup sugar, up to 1 13/4 cups
1 tsp cinnamon
2 tsp orange extract
2 each lemon, grated rind of
2 each oranges, grated rind of -or- tange
OPTIONAL
1 honey
1 almonds, toasted ,slivered
Directions
Toast the almonds on baking sheet for about 5 minutes at 400F. Reset
the oven for 350F. Grind one-third of the almonds. Mix the ground
almonds with the flour, sugar, and cinnamon. Add the orange extract
and the rinds. Mix well. Blend in the slivered almonds. Gradually,
add enough water to make a stiff dough (the dough will be sticky).
Form the dough into cake about 7 inches long, 2 inches wide and 1
inch thick. Bake for 35 minutes. Optional: While they are still hot,
brush the Kwaresimal with honey, and sprinkle with slivered toasted
almonds. Let the cakes cool for about 20 minutes, then with a
serrated knife cut them into slices about 3/8 inch thick. Variations:
Here are a few of the classic variations: Hazelnuts can be
substituted for the almonds. You can if you prefer all of the nuts,
or fewer of them. You can also insert some whole blanched almonds.
Remember the more nuts you grind to a powder, the more liquid you
will need to make the dough; and the fewer nuts you grind, the less
liquid. In Malta these cakes would often be made with orange-flower
water, which is hard to obtain here. Orange extract or liqueur (or
other liqueur or rum) can be used as a part of the liquid.
Never thought someone would actually ask for Maltese food!
Maltese food is fairly similar to Italian food , however there are few dishes that are very maltese-
For starters if you like fish try this one
A medium size Sea bass, red Snapper, Sea bream
1 large Onion cut into rings( thick) separate them
few cloves of garlic either finely chopped or just give it a few hits to smash them
1 teaspoon of capers
2 medium sized tomatoes cut in thick slices
One really large potato , skinned and cut into thick slices
a small bunch of parsley chopped fine
juice of one large lemon
salt to taste, few either green pepper corns or a teaspoon of peppercorns broken up
Olive oil
Wash , gut ,remove scales of fish and wash well , the cavity and pat dry- Season it with salt all over( a teaspoon will do) and pour the lemon juice on it- , and keep aside for 20 minutes
In a oven proof oblong glass dish, coat the dish with some olive oil, lay a thin layer of onions, on top few slices of the tomatoes and few of patatoes Lay the fish on that. once again use up the onions, tomatoes and potatoes and sprinkle the capers, peppercorns, and the parsley.
add a few table spoons of water just a bit and finally sprinkle a bit more olive oil on top.
Cover it with Foil and make few small holes to let the steam escape.
stick it into the oven on 175 to 180 degrees for half an hour.
If you like you can do this in the microwave as well just use cling film to cover it but use double of it- I normally do it this way. In the MW keep for 15 minutes or a bit less ,depending on your power settings
You can eat this with rice- or crusty Bread!
Its a very healthy way- let me know once you try it
