Really need simple but healthy recipes geared to feed one person - tired of wasting food & moneycan freeze .?

I'm cooking only for one - MYSELF - tired of wasting money %26amp; food


I know you can use the theory 'cook one - eat twice' but everything I freeze gets freezer burn -ice crystals


Am I not using the best freezer bags or containers?


looking for crockpot recipes, too


something for oven easy and not too long to prepare, so I could enjoy hot, fresh out of the oven meals...

You can always buy a fresh deli roasted chicken and have that for a couple of meals (or make 1 Cornish hen). Lloyd's makes great BBQ pork, beef %26amp; chicken to heat up and eat on buns. They're in refrigerated tubs; take out what you need; snap the lid back on and put back in refrigerator. There are also good refrigerated mashed potatoes %26amp; sweet potatoes in tubs too......You could make a small meat loaf. My husband is gone a lot, so I do one person meals all the time. I generally eat a grilled meat (steak, fish fillet, chicken breast, pork chop) grilled on my indoor grill, plus a steamed vegetable or salad and either beans or rice or potatoes.





You can buy single meats, I believe, but if you can't, separate them into single servings before you put them in the freezer. Then you can thaw just one at a time. You can portion out frozen vegetables right from the bag without thawing first. And it's easy to make just one potato or one serving of rice.





If you're having trouble with freezer burn you might try a vacuum sealer. Or exeriment with heavier bags. Try wrapping in plastic wrap first, then foil, then a freezer bag.





Try these combos: 1 sirloin steak (4 oz), 1 medium sweet potato, 1/2 cup broccoli





1 chicken breast, 1/2 cup green beans, 1 cup baked beans





1 salmon filet, 1 salad, 1 cup brown rice
They make frozen crockpot meals, but they're not as tasty.





Make a pot roast with carrots and potatoes and herbs. After you eat, make sure that it's completely cool before you put it in a sealer bag. I use a system where you cut your own size and then place the end in the machine so that all of the air is taken out. It really helped me reduce waste in my house.





Also, you could buy ground beef in pre- made patties to cook either hamburgers or hamburger steaks.





Another thing to try is if you make stock or grease drippings of some kind that you often use for flavoring. Take your leftovers and put them in ice cube trays. Just make sure you label them.
