What 's the best chinese food and its recipe?

This is very distinctively Chinese, and not western influenced - so it might not sit well with your palette. However, it is extremely delicious when eaten piping hot as a part of an entire Chinese course which should consist of : A vegetable dish (the suggestion above of the 'take several vegetables and fry them' is a good idea for a vegetable dish. Cabbage is a popular choice, with carrots, sliced shitake mushrooms/corn cobs and tiny dried shrimp for extra taste, with soy sauce, ginger, onion, salt.), an appetiser dish (something small and easy to pick off, usually dim sum like spring rolls) and a soup dish Chinese hot and sour soup is a good selection, or maybe a clear flower chicken soup.





FU ZHOU RED CHICKEN


(serves 4)





-Ingredients-





-10 slices of ginger


-3 tbsp fermented rice residue (or you can just use rice vinegar bought from a Chinese grocer.)


-1.2 large chicken, chopped into large pieces


-1 tsp sesame oil (again can be bought from a chinese grocer)


-10 dried shittake mushrooms (you can use fresh ones, but dried ones have a stronger flavour and taste)


-2 tbsp fish gravy (fish gravy is also called fish sauce, it's bottled like soy sauce. You can buy it at Chinese/thai grocers)


-1 tsp sugar (to balance the tangy flavour)


-2 tbsp red Shao Xing wine (you can get this at chinese grocers. If you can't find it, use a good bottle Chinese cooking wine. You can ask the grocer for his recommendations)


-a dash of cognac (or any other red wine)


* water, amount adjusted according to desired taste





-METHOD-





1. Soak mushrooms for 20 - 30 min. (or if you're using fresh mushrooms, wash it and skip this part.)





2.Stir fry sliced ginger until golden brown, then add fermented rice residue and stir-fry for another five minutes before adding chicken chunks, mushrooms, and sesame oil.





3. Stir briefly, and add fish gravy, sugar, red Shao Xing wine and water. Simmer for 15-30 min, or until desired fragrance is achieved.





4.Add a dash of cognac before serving.





Tip: This dish goes well with either rice or vermicelli.


* Add 100ml to 150ml water for rice, 500ml for vermicelli. Two to three portions of vermicelli can be added, but must be cooked separately from the made dish.What 's the best chinese food and its recipe?
