Greek Food recipe......?

Hiya we lived in Souda bay, Crete a island below greece and we used to eat at a place called the pizza house a few miles from the base there. They served special fries it was french frys with mozzeralla cheese and ham bits and it had a special sauce it was a orange color on it. We have searched all over the internet trying to find what kind of sauce it was. If anyone knows that would be great thanks.Greek Food recipe......?
The best I could find is, one article said they are served with cheese sauce and ketchup, and another with lemon. Here are a few recipes.





Greek-Style Oven Fries





3 medium unpeeled baking potatoes (about 1 1/2 pounds)


2 tablespoons lemon juice


2 teaspoons olive oil


1 teaspoon dried oregano


1/4 teaspoon pepper


1/4 teaspoon salt


2 cloves garlic, minced


vegetable cooking spray





Cut each potato lengthwise into 8 wedges. Combine lemon juice, olive oil, oregano, pepper, salt, and garlic in a large bowl. Add potatoes and toss well to coat.





Place potatoes, skin side down, on a baking sheet that has been coated with cooking spray.





Bake at 400 degrees for 45 minutes or until potatoes are tender and lightly browned.

Pan Fried Patates Tiganites


For this more labor intensive recipe, vary the amounts to suit your needs.





Russet potatoes, peeled and cut into thick pieces finger sized slices


Good quality olive oil for frying


salt


lemon(s) to serve





Blot the potato pieces dry with a paper towel. Heat approximately an inch of olive oil in a large heavy frying pan over low heat and add sufficient potatoes to make one layer. Cover and cook until the potatoes begin to turn golden. Remove the lid, increase the heat to medium-high, and frequently turn the potatoes one fry at a time, until they are golden brown. Remove the fry鈥檚 with a slotted spoon to a paper towel lined plate and repeat until all the potatoes are fried. Serve.








Oven Baked Patates Tiganites


This following recipe works very well and is less labor intensive than the pan-fried version:





3 lbs russet potatoes, peeled and cut into thick pieces finger sized slices


1/4 - 1/2 cup good quality olive oil plus oil to coat baking sheet


Salt


Lemon(s) to serve





Preheat the oven to 400掳.





Pour the oil in to a large bowl, add the potatoes and toss to coat. Oil a baking sheet with a little more olive oil, and arrange the potatoes in the sheet. Bake for 50 minutes or until potatoes are golden brown and cooked. Sprinkle with the salt and serve with the lemon for squeezing.
