What are some famous recipe and food dishes of Kentucky?

Surely you can do better than fried chicken...

Kentucky has some great food traditions, possibly the best southern food outside of New Orleans: Pecan Pie (especially the decadent variation-Derby Pie), Kentucky Pudding, Burgoo, Louisville Hot Browns, Stack Cake as well as staples like Hush Puppies, Fried Green Tomatoes and Grits. There are even some oddities like Fried Squirrel and Baked Possum which are edible if you drink enough Kentucky Bourbon and Mint Julip. What are some famous recipe and food dishes of Kentucky?

Fried Chicken
For Derby parties, anything w/ bourbon is a hit! I order my party goods from A Taste of Kentucky. Those folks are so nice, and so helpful, and ship quickly. You can order online from their web site w/ full color pics of all their merchandise. (no, I do not own stock in them!) ;)

Burgoo Stew is a must. But dont' maek the authentic one b/c it' has nasty meats in it like venison and rabbit and squirrel. Beef is plety exotic for me.

I usually just do ';southern'; foods, like a big ol' ham w/ biscuits on theside for ppl tomake ham biscuits, cheese straws, tomato sandwiches, etc. Since the race is run at 5 PM (Cnetral time), no one is really expecitng a solid meal.

Oh, and make those derby pies now. Let cool completely then freeze. Thaw the day of the party and they'll be great!
