8-inch flour or corn tortillas, re-fried beans, shredded cheese, salsa.





Spread small amounts of all or any of the fillings over half the tortilla, leaving a 1-inch border. Fold over and heat in a skillet, microwave or 350 degree oven until heated through. Cool 5 minutes, cut and serve.

Ingredients:

Lightlife chick'n strips, or other soy chicken


green bell pepper


sliced yellow onion

About 1 tsp of each cumin, garlic, onion, and some salt/pepper





First, start by saut茅ing the rice, bell pepper, and onions in oil. Immediately add all the spices. Add the soy chicken, and saut茅 until the rice becomes a more bold white. It鈥檚 pretty obvious once it does.





Then dump in the tomato sauce, and water, bring it to a boil and reduce to a simmer. Cook for about 30-40 minutes covered.

you could also try bean Papusas (not sure how you spell that) they are really easy to make.
You can make some jicama peeled and cut in thick strips with lemon, salt and chilli powder. It is tipical to find chopped fruit with lemon and chilli powder in many corners in mexican streets. You can send the lemons already cut in halves and prepare it at the moment.

1/2 pound elbow macaroni


3 tablespoons butter


3 tablespoons flour


1 tablespoon powdered mustard


3 cups milk


1/2 cup yellow onion, finely diced


1 bay leaf


1/2 teaspoon paprika


1 large egg


12 ounces sharp cheddar, shredded


1 teaspoon kosher salt


Fresh black pepper


Topping:


3 tablespoons butter


1 cup panko bread crumbs





Preheat oven to 350 degrees F.


In a large pot of boiling, salted water cook the pasta to al dente.


While the pasta is cooking, in a separate pot, melt the butter. Whisk in the flour and mustard and keep it moving for about five minutes. Make sure it's free of lumps. Stir in the milk, onion, bay leaf, and paprika. Simmer for ten minutes and remove the bay leaf.


Temper in the egg. Stir in 3/4 of the cheese. Season with salt and pepper. Fold the macaroni into the mix and pour into a 2-quart casserole dish. Top with remaining cheese.


Melt the butter in a saute pan and toss the bread crumbs to coat. Top the macaroni with the bread crumbs. Bake for 30 minutes. Remove from oven and rest for five minutes before serving.

APPLE (MAYA) STRUDLE -- INDIAN





1 qt. milk


1 1/2 c. flour


5 apples (Delicious)


2 tsp. baking powder


1 tsp. vanilla


1/2 c. sugar





By hand mix milk, flour, baking powder and vanilla. Cut the apples in thin slices. (Wash apples and use skin.)





Put apples in dough but do not beat. Bake 300 degrees until medium brown, 45-55 minutes.

Buffalo Chicken Dip


INGREDIENTS:


2 (10 ounce) cans chunk chicken, drained


2 (8 ounce) packages cream cheese, softened


1 cup Ranch dressing


3/4 cup pepper sauce, such as Franks庐 Red Hot庐


1 1/2 cups shredded Cheddar cheese


1 bunch celery, cleaned and cut into 4 inch pieces


1 (8 ounce) box chicken-flavored crackers


DIRECTIONS:


Heat chicken and hot sauce in a skillet over medium heat, until heated through. Stir in cream cheese and ranch dressing. Cook, stirring until well blended and warm. Mix in half of the shredded cheese, and transfer the mixture to a slow cooker. Sprinkle the remaining cheese over the top, cover, and cook on Low setting until hot and bubbly. Serve with celery sticks and crackers.





White Bean Chicken Chili








2 T corn oil


1 large onion chopped


4 large garlic cloves,chopped


1 T cummin


1 t dried oregagno


1/2 t dried crushed red pepper


1 pound skinless boneless chicken thighs cut into 1 inch pieces


1 15 ounce can cannellini beans (white kidney beans)


2 cups chicken broth canned


2 -4 ounce cans diced green chilies


Grated cheddar cheese


Chopped fresh cilantro





Heat oil in cooking pan over medium heat.Add onions,garlic,cumin,oregano and


dried red pepper.Saute 5 minutes.Push onion to side of pan. Season chicken


with salt and pepper and add to pan.cook chicken 5 minutes.





Add beans,broth,and gren chilies to chicken. Simmer untill chicken is tender


and cooked through,about 10 minuets.Season to taste withsalt and pepper.





Serve and top with cheese and sprinkle with cilantro.





Nachos Supreme





1 bag tortilla strips or chips


1 cup shredded Cheddar cheese


1/2 cup shredded Jack cheese


1 cup refried beans or canned pinto beans or refried beans


1 medium tomato, chopped


1/2 cup chopped green onion


1 can (2.25 oz) ripe olives, sliced


1/4 cup salsa picante


1/4 cup canned diced green chiles, drained


1/2 cup sour cream





Pile tortilla strips on a large ovenproof platter and mix and toss the remaining ingredients with the chips. Bake at 350 for 10-12 minutes or microwave for 2 to 3 minutes until heated through and cheese is melted. Serves 4 to 6 as an appetizer. 1 large can refried beans

cook spanish rice according to package.


fry hamburger meat and onions together. Season meat as plz. Add refried beans and cooked spanish rice in with hb meat. grate cheese into mixture and stir together.





separate toppings to add:


Guacomole


sour cream


hot sauce





dont forget a couple bags of tortilla chips


makes a great simple meal. feeds 4 or 5


double or triple to make as much as you want.


Family loves it and when i dont want to cook a big meal i cook this. Also you can add things and take away. a friend adds taco seasoning when he's cooking hb meat. have fun with it.
I was going to say Chili too, but a bunch of guys eating chili? Maybe not... I would make a platter of sandwiches, or if you feel like cooking, then some enchiladas? or a bunch of different appetizers.. hot wings.. meatballs, fruit salad... Some football cookies or cupcakes would be cute...

CROCKPOT BEANS





1 lb. hamburger, cooked and drained


3/4 lb bacon, fried and cut up


1 can of each:


Kidney beans


Lima beans


2 cans of Vegetarian style beans (Van De Camps style)


1 c chopped onion





1 c ketchup


1/4 c brown sugar


3 T liquid smoke


3 T vinegar


1 t salt

Chicken Wings always go over well. Instead of cooking them, order them and have time for other snack foods.





Taco Boats. Get a package of Wonton wraps. Usually sold in the produce section. Place two wraps each in a muffin tin (12 cups + 2 makes 24). Brown 1 pound of hamburger meat or sausage and 1 chopped onion. Drain and add 1 package of Ranch Dressing Mix. Stir in and spoon a little in each cup you have pre-baked and top with grated cheese. Add another dollop of meat and more cheese to top it off. Place back in the oven until cheese melts. Plate these up and have salsa and shredded lettuce for topping.





Make a large crock pot of cheese dip. Brown a pound of breakfast sausage with 1 chopped onion. Drain. Add to crock pot and stir in one can of cream of mushroom soup (undiluted), one can of Rotel and one large brick of Velveeta cheese (sliced). Let this simmer on low so the cheese melts and serve with tortilla chips. If it is too thick add tablespoon of heavy cream at a time.





This bean salad is awesome and filling since it has beans in it. Get one can each and drain, mixed beans, garbanzo beans, light red kidney beans. Mix it 1 bottle of French Dressing and when you are ready to serve dump in a bag of Frito Corn Chips and mix well. This one will surprise you!





Get a couple of packages of Italian Meatballs, already cooked. Thaw and place on the stove top with 1 large Bottle of Sweet Baby Ray's Chipotle BBQ Sauce. Let simmer on low to heat. Have toothpicks on the side for dipping!





Other than that pretzels and salted nuts for the game room.





For sweet tooths make brownies, a bunch of brownies!





I have learned over the years that a sit down meal on game day is not worth my time I put into it. The guys like to mingle and snack on and off all throughout the game and halftime.





Make snack type foods and they will be there when they are ready to eat and will last throughout the afternoon/evening.
I usually do chili, or burritos, or pizza. Hot dogs are good, and hamburgers, but if its cold, I won't do that.


They always like the mini weenie's in BBQ sauce or pigs in a blanket and crackers with meats and cheese, with all sorts of dips for chips. They even like the shrimp cocktail. I like to do a veg tray also, Amazingly they eat it all.

1 pound ground white meat chicken


1/2 small onion, grated


2 cloves garlic, grated


1/2 cup parsley, chopped


Salt and freshly ground black pepper


Extra-virgin olive oil (EVOO), for drizzling


2 tablespoons butter


1/2 cup hot sauce (such as Frank鈥檚)


3 scallions, green and white parts thinly sliced


Store-bought, good quality bleu cheese dressing for dipping


A couple of handfuls celery sticks


A couple of handfuls carrot sticks





Yields: 4 snack-size servings





Preparation


Preheat oven to 400潞F.


In a large mixing bowl, combine the ground chicken with the onion, garlic and parsley, and season with salt and freshly ground black pepper. Flatten out the meat in the bowl and score it into four portions using the side of your hand. Shape each portion into four balls 鈥?you should have sixteen meatballs in total.


Arrange the meatballs on a nonstick sheet pan and drizzle them with EVOO. Place in the oven and bake until the meatballs are cooked through and golden brown, about 10-12 minutes.


While the meatballs are baking, melt the butter in a large skillet over medium heat. Add the hot sauce and whisk to combine. Toss the baked meatballs in the hot sauce to coat.


Transfer the meatballs to a serving platter and spike each one with a toothpick or serving fork. Place the bleu cheese dressing in a small serving bowl and garnish with scallions. Serve the meatballs with the bleu cheese dressing, celery and carrot sticks alongside.

1 large or 2 small jalape帽o peppers, seeded and finely chopped


Juice of 1 lemon


1/4 red onion, finely chopped


2 cups arugula, chopped


1 cup chopped tomatoes, 3 to 4 roma or plum tomatoes, seeded


Extra-virgin olive oil (EVOO), for drizzling


A sack of corn chips





Yields: 10 servings





Preparation


Preheat oven to 350掳F.


Place bacon on a slotted broiler pan and bake for about 10-12 minutes, or until bacon gets crisp. Remove to a paper towel-lined plate, let cool for a couple minutes and roughly chop.


Pit and scoop avocados into a bowl. Chop the garlic, sprinkle 1 teaspoon salt over the chopped garlic and chop it again so it makes a paste. Add the garlic paste, the chopped jalape帽os, lemon juice and red onions to the bowl and mash the guacamole until smooth.


Season with salt and freshly ground black pepper. Transfer guacamole to a serving dish and top with the chopped arugula, tomatoes and bacon. Serve with corn chips.

1 package (about 12 pieces) chicken tenders or 1 pound boneless chicken breasts, cut into 1 1/2-inch strips


1/4 cup sour cream


1/4 cup blue cheese


1 scallion, chopped


Hot sauce, to taste


Juice of 1/2 lemon





Yields: 4-5 servings





Preparation


Preheat the oven to 350掳F.


Season the all-purpose flour with salt and freshly ground black pepper, and place in a shallow dish. Place the finely crushed potato chips in a second shallow dish. In a third dish, beat together the egg and milk. Coat the chicken tenders into the flour, coating completely and shaking off any excess.


Dip thoroughly in the egg mixture and then into the crushed chips.


Transfer the chip-coated chicken to a cookie sheet with a rack on top of it or put them on a broiler pan. Bake for 15-20 minutes, or until golden brown and cooked through.


While the chicken is baking, make the spicy blue cheese dipping sauce: In a bowl, combine the sour cream, blue cheese, scallion, hot sauce and lemon juice, and stir to combine. If the sauce is too thick for good dipping, add a shot or two of milk. Serve the sour cream and onion chicken fingers with the spicy blue cheese dipping sauce with a few celery and carrot sticks alongside for good measure.

6 tablespoons hot sauce


1/4 cup margarine, not butter


1 tablespoon white vinegar


1/8 teaspoon celery seeds


1/4 teaspoon cayenne pepper


1/8 teaspoon garlic salt


1 dash pepper


1/4 teaspoon worcestershire sauce


1-2 tablespoon Tabasco sauce, sauce-this will determine how hot it is

1. Combine coating mixture and coat chicken pieces. Refrigerate coated chicken for at least 1 hour. Meanwhile combine sauce ingredients in a saucepan over low heat until margarine is completely melted. Coat chicken in leftover flour mixture. Deep fry chicken in 375 degrees oil for 13 minute or until juices run clear. Drain on paper towel and place in bowl and toss with sauce. Repeat with remaining chicken

chili is always easy, filling, and great if it's cold.

Don't make too much effort if they are drinkers.....they won't want to fill up on food and will be too busy watching the game to have a sit down meal, so keep it simple with mostly finger foods and dips and something small during halftime. good luck!
Make something that can be mostly done in advance so you can spend time with your friends watching the game instead of being trapped in the kitchen.





Try a simple ground beef or turkey bolognese (recipes abound in cookbooks and on the web). It's easy (and forgiving) to make, even for a big crowd, the sauce can be prepared in advance (indeed, it's best prepared a day or two in advance), and the only cooking you'll need to do when it's feeding time is the pasta. Use penne for the pasta -- it's easier to eat around a TV than the traditional tagliatelle (a lasagna is another good substitute and can also be done in advance, only to need heating). Serve with a big salad with Italian dressing.





By the way, if you use turkey, use ground dark (thigh) meat, not white meat, which is utterly insipid.

VEGETABLE LASAGNA





9 lasagna noodles, cooked and drained


1 (19 oz.) pkg. frozen spinach or broccoli cuts, defrosted and squeezed dry


1 (32 oz.) carton Ricotta cheese


1/2 c. grated Parmesan cheese (plus a little to grate on top)


1 (32 oz.) jar of your favorite spaghetti sauce (with mushrooms is good and keeps the recipe vegetarian)


1/2 tsp. Italian seasoning/herbs





Combine the spinach or broccoli (and any veggies leftover in the refrigerator), Ricotta, Parmesan cheese, and herbs. In a 9 x 13 inch pan, layer ingredients in the following order: 1/2 cheese mixture 1/3 sauce


Repeat and top with 3 noodles, sauce, and a sprinkling of Parmesan cheese. Bake 30 minutes at 350 degrees.
I would do a big pot or crock pot full of chili and a couple of huge trays of chicken wings. Serve the chili with big slices of garlic bread, and of course have lots of drinks on hand!

    Really good? Homemade hamburger macaroni. Just brown beef, drain some fat off, season, add onions and carrots if you want and stew with a little beef stock and thicken with a little flour. Then mix with boiled pasta.

    This is very distinctively Chinese, and not western influenced - so it might not sit well with your palette. However, it is extremely delicious when eaten piping hot as a part of an entire Chinese course which should consist of : A vegetable dish (the suggestion above of the 'take several vegetables and fry them' is a good idea for a vegetable dish. Cabbage is a popular choice, with carrots, sliced shitake mushrooms/corn cobs and tiny dried shrimp for extra taste, with soy sauce, ginger, onion, salt.), an appetiser dish (something small and easy to pick off, usually dim sum like spring rolls) and a soup dish Chinese hot and sour soup is a good selection, or maybe a clear flower chicken soup.





    FU ZHOU RED CHICKEN


    (serves 4)





    -Ingredients-





    -10 slices of ginger


    -3 tbsp fermented rice residue (or you can just use rice vinegar bought from a Chinese grocer.)


    -1.2 large chicken, chopped into large pieces


    -1 tsp sesame oil (again can be bought from a chinese grocer)


    -10 dried shittake mushrooms (you can use fresh ones, but dried ones have a stronger flavour and taste)


    -2 tbsp fish gravy (fish gravy is also called fish sauce, it's bottled like soy sauce. You can buy it at Chinese/thai grocers)


    -1 tsp sugar (to balance the tangy flavour)


    -2 tbsp red Shao Xing wine (you can get this at chinese grocers. If you can't find it, use a good bottle Chinese cooking wine. You can ask the grocer for his recommendations)


    -a dash of cognac (or any other red wine)


    * water, amount adjusted according to desired taste





    -METHOD-





    1. Soak mushrooms for 20 - 30 min. (or if you're using fresh mushrooms, wash it and skip this part.)





    2.Stir fry sliced ginger until golden brown, then add fermented rice residue and stir-fry for another five minutes before adding chicken chunks, mushrooms, and sesame oil.





    3. Stir briefly, and add fish gravy, sugar, red Shao Xing wine and water. Simmer for 15-30 min, or until desired fragrance is achieved.





    4.Add a dash of cognac before serving.





    Tip: This dish goes well with either rice or vermicelli.

    Maple Syrup Cake





    2 cups cake and pastry flour


    1/2 tsp. salt


    1 1/2 tsp. baking powder


    1/2 tsp. baking soda


    2/3 cup shortening


    2/3 cup lightly packed brown sugar


    2 eggs


    1/2 tsp. maple flavouring


    3/4 cup buttermilk


    1/2 cup maple syrup





    Preheat oven to 350 deg..


    Grease two 8 inch round cake pans - line bottoms with wax paper.


    Sift flour, salt, baking powder and baking soda together.


    Cream shortening, then add brown sugar and beat until light and fluffy.


    Add eggs and maple flavouring and beat.


    Combine buttermilk and maple syrup.


    Stir dry ingredients into creamed mixture alternately with liquid. Make 3 dry and 2 liquid additions. Mix well after each.

    Ingredients:


    4 large potatoes, peeled


    1 teaspoon salt


    Oil for frying


    1 cup cheese curds


    1 1/3 cups beef gravy, heated


    Preparation:


    Cut the potatoes lengthwise into thin strips, about 1/3-inch in width. Soak the potatoes in ice-cold water for 1 hour, drain, and pat completely dry. Heat the oil in a deep fryer or deep skillet to 325F and fry the potatoes, in batches, for 3 minutes, until they turn dark white-yellow, but not brown. Drain the fries on fresh paper towels and allow them to rest for a few minutes.





    Bring the oil back to 325F and fry the potatoes again, in batches, for 4 to 5 minutes, until they turn crisp and medium golden brown. Drain the fries on fresh paper towels, salt them, and divide them onto 4 serving plates or bowls.





    Add 1/4 cup of the cheese curds and 1/3 cup of the hot beef gravy on each serving of fries. Serve hot.

    1/4 cup butter


    2 cloves garlic, minced


    6 peeled and deveined large shrimp (21 to 25 per lb)


    6 mushrooms, stems removed


    2 tablespoons shredded mozzarella cheese








    DIRECTIONS


    Preheat oven to 325 degrees F (165 degrees C).


    Heat the butter and garlic in a skillet over medium heat until the butter begins to bubble. Stir in the shrimp, and cook until they just turn pink, about 3 minutes. Place one shrimp into each mushroom cap, and place into a small baking dish. Spoon the garlic butter into the mushroom caps, and sprinkle each with a pinch of mozzarella cheese.


    Bake in the preheated oven until the mushrooms are tender and the cheese is golden and bubbly, 10 to 15 minutes.

    Hiya we lived in Souda bay, Crete a island below greece and we used to eat at a place called the pizza house a few miles from the base there. They served special fries it was french frys with mozzeralla cheese and ham bits and it had a special sauce it was a orange color on it. We have searched all over the internet trying to find what kind of sauce it was. If anyone knows that would be great thanks.Greek Food recipe......?
    The best I could find is, one article said they are served with cheese sauce and ketchup, and another with lemon. Here are a few recipes.





    Greek-Style Oven Fries





    3 medium unpeeled baking potatoes (about 1 1/2 pounds)


    2 tablespoons lemon juice


    2 teaspoons olive oil


    1 teaspoon dried oregano


    1/4 teaspoon pepper


    1/4 teaspoon salt


    2 cloves garlic, minced


    vegetable cooking spray





    Cut each potato lengthwise into 8 wedges. Combine lemon juice, olive oil, oregano, pepper, salt, and garlic in a large bowl. Add potatoes and toss well to coat.





    Place potatoes, skin side down, on a baking sheet that has been coated with cooking spray.





    Bake at 400 degrees for 45 minutes or until potatoes are tender and lightly browned.

    For this more labor intensive recipe, vary the amounts to suit your needs.





    Russet potatoes, peeled and cut into thick pieces finger sized slices


    Good quality olive oil for frying

    Blot the potato pieces dry with a paper towel. Heat approximately an inch of olive oil in a large heavy frying pan over low heat and add sufficient potatoes to make one layer. Cover and cook until the potatoes begin to turn golden. Remove the lid, increase the heat to medium-high, and frequently turn the potatoes one fry at a time, until they are golden brown. Remove the fry鈥檚 with a slotted spoon to a paper towel lined plate and repeat until all the potatoes are fried. Serve.








    Oven Baked Patates Tiganites


    This following recipe works very well and is less labor intensive than the pan-fried version:





    3 lbs russet potatoes, peeled and cut into thick pieces finger sized slices


    1/4 - 1/2 cup good quality olive oil plus oil to coat baking sheet


    Salt


    Lemon(s) to serve





    Preheat the oven to 400掳.





    Pour the oil in to a large bowl, add the potatoes and toss to coat. Oil a baking sheet with a little more olive oil, and arrange the potatoes in the sheet. Bake for 50 minutes or until potatoes are golden brown and cooked. Sprinkle with the salt and serve with the lemon for squeezing.

    They're using sugar-free breakfast syrup in place of the corn syrup.





    Just keep in mind that eating too much sugar substitute at one time will have a laxative effect.
    I would second the honey or would use agave nectar. It's a little sweeter than honey so you may need to experiment with the quantity.





    I really enjoy maple syrup in my pecan pie. You could try the sugar free maple syrup, again it's really sweet so I would us a little less.

    Stirfry your fave veg in low fat spray. I use mushrooms, onions, peppers and carrot. Add 100g of chicken tonite sweet and sour sauce. Add 60g of sweet corn (2 tablespoons) and some beansprouts if you like them. Serve over a plate of lettuce and cherry tomatoes. Very filling and low in fat.





    To vary it try using some asda stirfry sauces ie teriyaki or chowmein flavour, or instead of lettuce and tomato serve with a baked potato. Delicious! Enjoy

    Grilled Venison Steaks with Red Onion, Grape and Raisin Confit


    4 venison steaks (each weighing about 5 oz/150 g)


    2 teaspoons groundnut or other flavourless oil


    a few salad leaves, to garnish





    For the confit:


    1 medium red onion, chopped but not too small


    6 oz (175 g) black grapes, halved and deseeded (no need to peel)


    3 oz (75 g) raisins


    10 fl oz (275 ml) red wine


    2 fl oz (55 ml) red wine vinegar


    1 teaspoon dark soft brown sugar





    Begin by making the confit. You can make it at any time 鈥?even the day before. What you do is put all the ingredients together in a medium-sized saucepan, bring everything up to a very gentle simmer, then let it cook as gently as possible, without the lid, for 45-60 minutes 鈥?you'll need to give it a gentle stir from time to time 鈥?until all the liquid has reduced to a lovely sticky glaze.





    When you are ready to cook the steaks, season them with freshly milled black pepper. Then pre-heat the grill to its highest setting for about 10 minutes. Brush the steaks lightly on both sides with the oil and grill them for about 4 minutes on each side if you like them medium-rare, otherwise for a little longer. Meanwhile, gently re-heat the confit. Serve the venison on warmed plates with the confit and a crisp salad.





    or Gammon Steaks with White Wine and Gherkin Sauce


    4 large gammon steaks (7-8 oz/200-225 g each)





    For the sauce:


    15 fl oz (425 ml) dry white wine


    8 small gherkins, drained and finely chopped


    2 oz (50 g) butter


    1 large onion, finely chopped


    1 tablespoon plain flour


    2 tablespoons chopped fresh parsley


    1 teaspoon lemon juice


    salt and freshly milled black pepper





    First of all, pre-heat the grill to its highest setting and, while it鈥檚 warming up, make the sauce. In a small saucepan melt the butter and soften the onion in it over a medium heat for 5 minutes, then stir in the flour and gradually add the wine, a little at a time, stirring after each addition until you have a smooth sauce. Turn the heat down to a low setting and let the sauce simmer for 10 minutes while you鈥檙e cooking the gammon.





    Remove the rind from the gammon steaks (the birds will love it chopped!), then snip the fat on the steaks with kitchen scissors at 1 inch (2.5 cm) intervals all round 鈥?this helps to keep it flat while it鈥檚 cooking. Now, grill the gammon steaks for 2-3 minutes on each side, depending on the thickness of them. Towards the end of the cooking time, stir the chopped gherkins, parsley and lemon juice into the sauce, then taste and season with pepper (but watch the salt because the gammon may be salty). Serve the gammon steaks with the sauce poured over.

    12 oz (350 g) each white crab meat and brown crab meat (or 2 medium-sized, ready-dressed crabs in the shell)


    2 medium-sized, ready-dressed crabs in their shell


    grated zest 1 lime (juice reserved for dressing)


    3 tablespoons chopped fresh coriander


    3 tablespoons chopped fresh mint





    For the salad:


    1 large mango, peeled and sliced into strips


    1 level teaspoon sesame seeds


    4 oz (110 g) rocket leaves, stalks removed


    3 stems lemon grass, ends trimmed and outer layer discarded, then very finely sliced


    6 kaffir lime leaves (if available), rolled into a cigar shape and very finely shredded


    1 teaspoon freshly snipped chives





    For the dressing:


    2-3 medium-sized red chillies, halved and deseeded


    2 cloves garlic


    1 inch (2.5 cm) piece fresh root ginger, peeled


    6 sprigs fresh coriander


    1 sprig fresh mint


    1陆 tablespoons Thai fish sauce


    juice 2 limes (about 3 tablespoons)


    1 level teaspoon light (or dark) soft brown sugar





    First, pre-heat a small frying pan over a medium heat, then add the sesame seeds. Keep them on the move until they鈥檙e golden and begin to splutter 鈥?about a minute. Then remove the pan from the heat and allow it to cool.





    Meanwhile, make the dressing. Blend the chillies, garlic, ginger and sprigs of coriander and mint in a food processor or blender until finely chopped, then add the fish sauce, lime juice and sugar and whiz again.





    Next, put the crab meat into a bowl and pour over three-quarters of the dressing, then add the lime zest and most of the chopped coriander and mint (saving some to sprinkle over later), and toss so it鈥檚 well coated.





    Now put the rocket leaves into a large serving bowl, toss them in the remaining dressing and pile the crab meat on top, along with slices of mango here and there. Then sprinkle over the lemon grass, lime leaves (if using), remaining coriander and mint, chives and sesame seeds.

    12 oz (350 g) minced Scotch lamb


    1 medium onion


    2 oz (50 g) piece of swede


    4 oz (110 g) carrots


    陆 level teaspoon ground cinnamon


    1 rounded teaspoon fresh chopped thyme


    1 rounded tablespoon fresh chopped parsley


    陆 oz (10 g) plain flour


    1 rounded tablespoon tomato pur茅e


    15 fl oz (425 ml) vegetable stock


    salt and freshly milled black pepper





    For the topping:


    2 lb (900 g) Desir茅e potatoes


    2陆 oz (60 g) quark


    2 fl oz (55 ml) semi-skimmed milk


    6 oz (175 g) leeks


    1陆 oz (40 g) half-fat Cheddar


    1 oz (25 g) finely grated Parmesan (Parmigiano Reggiano)


    salt and freshly milled black pepper





    Pre-heat the oven to gas mark 1, 275掳F (140掳C).





    Start off by peeling the onion, swede and carrots, chop them into chunks and place them into the bowl of a food processor. Then add the cinnamon, herbs and flour and whiz everything until it's all finely chopped (be careful, though, you don't want to end up with a pur茅e). Now place the lot in the casserole, add the lamb and give it all a good seasoning.





    Next mix the tomato pur茅e and stock together in a jug, stir this into the casserole and give it all a good mix. Place the casserole over a gentle heat and bring it up to simmering point. Cover with the lid and place it in the pre-heated oven on the centre shelf to cook for 2 hours.





    About 30 minutes before the time is up, peel the potatoes, cut them into even-sized chunks and place them in a saucepan. Pour boiling water over, add some salt, cover and simmer for 20-25 minutes or until they're tender when pierced with a skewer.





    After that, drain the potatoes, cover with a clean tea cloth for 5 minutes to absorb the steam, then, start to mash the potatoes (an electric handheld whisk on slow speed is best for this), gradually adding the quark, milk and a seasoning of salt and freshly milled black pepper and continuing to whisk until the potatoes are light and fluffy.





    At this point remove the casserole from the oven and increase the temperature to gas mark 6, 400掳F (200掳C). Transfer the meat to the dish and cover it evenly with the mashed potato. Now slice the leek lengthways into four and chop each length into 录 inch (5 mm) slices. Rinse and dry them, then cover the potato with chopped leek, pressing them gently into the surface. Finally cover the leeks with grated Cheddar and then sprinkle with the Parmesan. Return the dish to the oven on a high shelf for 25 minutes or until the top is golden and crusty.
    if you like vegetables here is a recipe i love ... and is really fast and simple.. the only thing is that maybe you have to buy this things... but if you don't have some of them you can replace them with anything you like





    1 lb asparagus, cut into 2'; pieces


    3 cups broccoli florets


    Cooking spray


    1 cup red bell pepper, chopped


    1 1/4 cups zucchini, chopped


    1/2 cup onion, chopped


    4 cups cooked brown rice


    2 cups tomatoes, chopped


    3/4 teaspoon salt


    1/2 teaspoon saffron threads, or 1/4 tsp turmeric


    2 15 oz cans garbanzo beans, rinsed %26amp; drained


    1 10 oz pkg frozen peas, thawed





    Cook asparagus and broccoli in enough boiling water to cover, about 4 minutes or until crisp-tender; drain. Heat cooking spray in 10'; skillet over medium-high heat. Cook asparagus, broccoli, bell pepper, zucchini, and onion about 5 minutes, stirring occasionally, until onion is crisp-tender. Stir in remaining ingredients. Cook about 5 minutes, stirring frequently, until hot.

    LOW FAT CAKE





    3 egg whites


    1/3 c. low fat applesauce


    1 1/4 c. water


    1 any flavor cake mix





    Preheat oven to 350 degrees. Spray baking pans with non-stick cooking spray, mix cake mix, water, applesauce and egg whites in large bowl with electric batter at low speed (or beat 2 minutes by hand). Pour batter in pan. Bake according to box directions or until done. Cool in pan on rack, and remove, when cool apply low fat frosting.

    boil some ginger (2/5 slicer in 2 liters of water) add some chicken stock, cabbage, spring unions, sherry (half a cup), assorted mushrooms (not dried ones, soak dryed ones first), sesamy oil (3 theaspoons). You can add chicken or meatballs if you want.

    I have a cheese ball recipe that is awesome. Even people who absolutely cannot stand cream cheese love it. It's quick and easy. I made this for my Speech class in college and everyone loved it. I had to make recipe copies for the whole class...there were about 32 people in my class excluding myself. Anyway, what you'll need is:





    2- 8oz. cream cheese (Philadelphia is the best)


    1- bunch green onions (If they are sold as 2 bunches, use only 1/2)


    1- tablespoon worcestershire sauce (I use the cheap kind-it tastes just as good)


    1- tablespoon Accent (you can find it w/ all the spices in the grocery store)


    1 1/2- pkges. Carl Buddig corned beef


    1- sm bag chopped pecans*


    Box of Ritz crackers (They're the best)





    Dice green onions and corned beef and mix everything together. Roll into a big ball and top w/ pecans. Serve on Ritz crackers or let the guests top the crackers themselves.





    If you use parchment, or wax paper, during preparation, it makes for an easy clean-up.

    when you take them out, I use and aluminum pan with paper towel on the bottom, sprinkle with a mixture of sugar and cinnamon, I use a jar that I keep the mixture in at all times.

    INGREDIENTS:


    2 (10 ounce) cans chunk chicken, drained


    2 (8 ounce) packages cream cheese, softened


    1 cup Ranch dressing


    3/4 cup pepper sauce, such as Franks庐 Red Hot庐


    1 1/2 cups shredded Cheddar cheese


    1 bunch celery, cleaned and cut into 4 inch pieces


    1 (8 ounce) box chicken-flavored crackers


    DIRECTIONS:


    Heat chicken and hot sauce in a skillet over medium heat, until heated through. Stir in cream cheese and ranch dressing. Cook, stirring until well blended and warm. Mix in half of the shredded cheese, and transfer the mixture to a slow cooker. Sprinkle the remaining cheese over the top, cover, and cook on Low setting until hot and bubbly. Serve with celery sticks and crackers.





    White Bean Chicken Chili








    2 T corn oil


    1 large onion chopped


    4 large garlic cloves,chopped


    1 T cummin


    1 t dried oregagno


    1/2 t dried crushed red pepper


    1 pound skinless boneless chicken thighs cut into 1 inch pieces


    1 15 ounce can cannellini beans (white kidney beans)


    2 cups chicken broth canned


    2 -4 ounce cans diced green chilies


    Grated cheddar cheese


    Chopped fresh cilantro





    Heat oil in cooking pan over medium heat.Add onions,garlic,cumin,oregano and


    dried red pepper.Saute 5 minutes.Push onion to side of pan. Season chicken


    with salt and pepper and add to pan.cook chicken 5 minutes.





    Add beans,broth,and gren chilies to chicken. Simmer untill chicken is tender


    and cooked through,about 10 minuets.Season to taste withsalt and pepper.





    Serve and top with cheese and sprinkle with cilantro.





    Nachos Supreme





    1 bag tortilla strips or chips


    1 cup shredded Cheddar cheese


    1/2 cup shredded Jack cheese


    1 cup refried beans or canned pinto beans or refried beans


    1 medium tomato, chopped


    1/2 cup chopped green onion


    1 can (2.25 oz) ripe olives, sliced


    1/4 cup salsa picante


    1/4 cup canned diced green chiles, drained


    1/2 cup sour cream





    Pile tortilla strips on a large ovenproof platter and mix and toss the remaining ingredients with the chips. Bake at 350 for 10-12 minutes or microwave for 2 to 3 minutes until heated through and cheese is melted. Serves 4 to 6 as an appetizer.     CROCKPOT BEANS





    1 lb. hamburger, cooked and drained


    3/4 lb bacon, fried and cut up


    1 can of each:


    Kidney beans


    Lima beans


    2 cans of Vegetarian style beans (Van De Camps style)


    1 c chopped onion





    1 c ketchup


    1/4 c brown sugar


    3 T liquid smoke


    3 T vinegar


    1 t salt


    pepper...





    Cook on low in crockpot... YUMMMM!!!
    Chicken Wings always go over well. Instead of cooking them, order them and have time for other snack foods.





    Taco Boats. Get a package of Wonton wraps. Usually sold in the produce section. Place two wraps each in a muffin tin (12 cups + 2 makes 24). Brown 1 pound of hamburger meat or sausage and 1 chopped onion. Drain and add 1 package of Ranch Dressing Mix. Stir in and spoon a little in each cup you have pre-baked and top with grated cheese. Add another dollop of meat and more cheese to top it off. Place back in the oven until cheese melts. Plate these up and have salsa and shredded lettuce for topping.





    Make a large crock pot of cheese dip. Brown a pound of breakfast sausage with 1 chopped onion. Drain. Add to crock pot and stir in one can of cream of mushroom soup (undiluted), one can of Rotel and one large brick of Velveeta cheese (sliced). Let this simmer on low so the cheese melts and serve with tortilla chips. If it is too thick add tablespoon of heavy cream at a time.





    This bean salad is awesome and filling since it has beans in it. Get one can each and drain, mixed beans, garbanzo beans, light red kidney beans. Mix it 1 bottle of French Dressing and when you are ready to serve dump in a bag of Frito Corn Chips and mix well. This one will surprise you!





    Get a couple of packages of Italian Meatballs, already cooked. Thaw and place on the stove top with 1 large Bottle of Sweet Baby Ray's Chipotle BBQ Sauce. Let simmer on low to heat. Have toothpicks on the side for dipping!





    Other than that pretzels and salted nuts for the game room.





    For sweet tooths make brownies, a bunch of brownies!





    I have learned over the years that a sit down meal on game day is not worth my time I put into it. The guys like to mingle and snack on and off all throughout the game and halftime.





    Make snack type foods and they will be there when they are ready to eat and will last throughout the afternoon/evening.
    I usually do chili, or burritos, or pizza. Hot dogs are good, and hamburgers, but if its cold, I won't do that.


    They always like the mini weenie's in BBQ sauce or pigs in a blanket and crackers with meats and cheese, with all sorts of dips for chips. They even like the shrimp cocktail. I like to do a veg tray also, Amazingly they eat it all.

    Ingredients


    1 pound ground white meat chicken


    1/2 small onion, grated


    2 cloves garlic, grated


    1/2 cup parsley, chopped


    Salt and freshly ground black pepper


    Extra-virgin olive oil (EVOO), for drizzling


    2 tablespoons butter


    1/2 cup hot sauce (such as Frank鈥檚)


    3 scallions, green and white parts thinly sliced


    Store-bought, good quality bleu cheese dressing for dipping


    A couple of handfuls celery sticks


    A couple of handfuls carrot sticks





    Yields: 4 snack-size servings





    Preparation


    Preheat oven to 400潞F.


    In a large mixing bowl, combine the ground chicken with the onion, garlic and parsley, and season with salt and freshly ground black pepper. Flatten out the meat in the bowl and score it into four portions using the side of your hand. Shape each portion into four balls 鈥?you should have sixteen meatballs in total.


    Arrange the meatballs on a nonstick sheet pan and drizzle them with EVOO. Place in the oven and bake until the meatballs are cooked through and golden brown, about 10-12 minutes.


    While the meatballs are baking, melt the butter in a large skillet over medium heat. Add the hot sauce and whisk to combine. Toss the baked meatballs in the hot sauce to coat.


    Transfer the meatballs to a serving platter and spike each one with a toothpick or serving fork. Place the bleu cheese dressing in a small serving bowl and garnish with scallions. Serve the meatballs with the bleu cheese dressing, celery and carrot sticks alongside.

    3 ripe avocados


    2 cloves garlic

    1 large or 2 small jalape帽o peppers, seeded and finely chopped


    Juice of 1 lemon


    1/4 red onion, finely chopped


    2 cups arugula, chopped


    1 cup chopped tomatoes, 3 to 4 roma or plum tomatoes, seeded


    Extra-virgin olive oil (EVOO), for drizzling


    A sack of corn chips





    Yields: 10 servings





    Preparation


    Preheat oven to 350掳F.


    Place bacon on a slotted broiler pan and bake for about 10-12 minutes, or until bacon gets crisp. Remove to a paper towel-lined plate, let cool for a couple minutes and roughly chop.


    Pit and scoop avocados into a bowl. Chop the garlic, sprinkle 1 teaspoon salt over the chopped garlic and chop it again so it makes a paste. Add the garlic paste, the chopped jalape帽os, lemon juice and red onions to the bowl and mash the guacamole until smooth.


    Season with salt and freshly ground black pepper. Transfer guacamole to a serving dish and top with the chopped arugula, tomatoes and bacon. Serve with corn chips.

    Preparation


    Preheat the oven to 350掳F.


    Season the all-purpose flour with salt and freshly ground black pepper, and place in a shallow dish. Place the finely crushed potato chips in a second shallow dish. In a third dish, beat together the egg and milk. Coat the chicken tenders into the flour, coating completely and shaking off any excess.


    Dip thoroughly in the egg mixture and then into the crushed chips.


    Transfer the chip-coated chicken to a cookie sheet with a rack on top of it or put them on a broiler pan. Bake for 15-20 minutes, or until golden brown and cooked through.


    While the chicken is baking, make the spicy blue cheese dipping sauce: In a bowl, combine the sour cream, blue cheese, scallion, hot sauce and lemon juice, and stir to combine. If the sauce is too thick for good dipping, add a shot or two of milk. Serve the sour cream and onion chicken fingers with the spicy blue cheese dipping sauce with a few celery and carrot sticks alongside for good measure.

    Don't make too much effort if they are drinkers.....they won't want to fill up on food and will be too busy watching the game to have a sit down meal, so keep it simple with mostly finger foods and dips and something small during halftime. good luck!

    9 lasagna noodles, cooked and drained


    1 (19 oz.) pkg. frozen spinach or broccoli cuts, defrosted and squeezed dry


    1 (32 oz.) carton Ricotta cheese


    1/2 c. grated Parmesan cheese (plus a little to grate on top)


    1 (32 oz.) jar of your favorite spaghetti sauce (with mushrooms is good and keeps the recipe vegetarian)


    1/2 tsp. Italian seasoning/herbs





    Combine the spinach or broccoli (and any veggies leftover in the refrigerator), Ricotta, Parmesan cheese, and herbs. In a 9 x 13 inch pan, layer ingredients in the following order: 1/2 cheese mixture 1/3 sauce


    Repeat and top with 3 noodles, sauce, and a sprinkling of Parmesan cheese. Bake 30 minutes at 350 degrees.
    I would do a big pot or crock pot full of chili and a couple of huge trays of chicken wings. Serve the chili with big slices of garlic bread, and of course have lots of drinks on hand!

    Beans ! Not sause based but butter beans or chick peas boil them and you can whisk in olive oil and onions/tomatoes/capcicum/mushroom for flavour OR eat them with salt and pepper or salad dressing.

    It may not be exciting, but tempeh, or tofu are good. If you stir fry them with soy and spices, they can be quite tasty. Beans give a good satiety factor. They are so full of fiber that the damage they can do to the waist line is pretty negligible.

    I always think it's brilliant if you can turn the humble carrot into anything remotely cool or credible, especially in the salad world. You deserve to have a medal if you can come up with something amazing. If you're lucky enough to have vegetables in your garden you'll know what I mean when I say freshness is everything. But those of you who haven't got a garden should buy the freshest-looking organic ones that you can find.





    I use a mandolin to slice the carrots for the salad - it will give you long ribbony slices - but you can use a speed peeler or do it by hand with a knife instead. As long as your results are nice and crunchy, that's all that matters.





    This is really good as a starter, or try eating it with some little kebabs if you're having a barbecue, or stuffed into some pitta bread with sliced grilled chicken.





    First of all, slice the carrots or cut them up into fine ribbons, matchsticks or batons. Put them into a salad bowl with the coriander leaves and the sesame or poppy seeds. To make the dressing, finely grate the zest of the orange into a bowl. Add the orange juice, the juice of 1陆 lemons and about 4 times that amount of extra virgin olive oil. Pound your toasted sesame seeds to a pulp in a pestle and mortar, then add to the dressing. Mix well, then season to taste with salt, pepper and possibly more lemon juice to make it nice and zingy so that you can taste it once you've dressed the salad. Once the salad is dressed, the flavour of the lemon will lessen, so get eating straight away.

    INGREDIENTS





    2 lb (900g) minced beef


    5 eggs


    1 and half oz (45g) plain flour


    2 oz (60g) unsalted butter


    16 fl.oz (475ml) milk


    8 fl.oz (250ml) red wine


    8 fl.oz (250ml) beef stock


    4 oz (115g) cottage cheese


    4 oz (115g) Graviera (or Gruyere) cheese grated


    2 oz (60g) Parmesan cheese


    1 oz (30g) feta cheese grated


    4 aubergines


    2 onions finely chopped


    6 tomatoes


    1 tablespoon all spices


    2 tablespoons of parsley finely chopped


    2 tablespoons of ground cinnamon


    Salt %26amp; Freshly ground black pepper


    1 teaspoon of nutmeg


    1 oz (30g) fine breadcrumbs





    INSTRUCTIONS





    1) Trim the ends off the aubergines and cut into quarter


    inch (5mm) slices


    2) Lightly spinkle with salt, leave to stand in a colander


    for 60 min.


    3) Add 3 tablespoons of olive oil to a saucepan, heat


    4) Add onions, cook over low heat for 5 min, until golden


    5) Increase heat, add meat and cook over moderate heat


    until brown


    6) Add the wine, bring to the boil, stirring


    7) Add tomatoes, lower heat simmer for 10 minutes


    8) Add 1 tablespoon of parsley, stock, cinnamon, allspice,


    1 teaspoon of salt, and 1 teaspoon of pepper


    9) Simmer for 30 minutes, until liquid has evaporated,


    cover and set aside


    10) Heat 3 tablespoons of olive oil in a frying pan, add a


    layer of aubergines to the pan, fry until golden on


    both sides.


    11) Remove and drain on paper towel


    12) Add 1 tablespoon to pan and fry another layer and


    repeat, set aside


    13) Melt butter in a sausepan, add flour and stir until


    smooth


    14) Heat over a moderate heat for 2 minutes


    15) Gradually add the milk, stir, bring to the boil, remove


    16) Add the cheeses and nutmeg and stir into a sauce


    17) Stir in well beaten eggs, a little at a time, mix well


    18) Season to taste and set aside


    19) Preheat oven to (180掳C), (350掳F),(Gas Mark 4 )


    20) Layer a 4 inch (10cm) baking dish with aubergines


    21) Cover with 1 third of the meat, cover with 4


    tablespoons of sauce


    22) Repeat (20 and 21) twice


    23) Top with aubergines and cover with remaining sauce,


    sprinkle with breadcrumbs


    24) Bake uncovered for 60 minutes


    25) Garnish with parsley and serve hot





    TZATZIKI








    Cucumber and yogurt dip. This dip is extremely popular


    throughout Greece and is almost always included in the


    assorted appetizers served in restaurants and tavernas.





    Ingredients





    2 cups plain yogurt.


    2 large cucumbers.


    1 tablespoon minced garlic.


    1 tablespoon white vinegar.


    2 tablespoons olive oil.


    Salt and pepper to taste.





    Preparation





    Put yogurt in a cheesecloth-lined sieve over a bowl. Drain


    several hours or overnight in the refrigerator.





    (Hand method)


    Peel, seed, and coarsely grate cucumbers. Drain well. Add


    garlic, vinegar, olive oil, salt, and pepper to cucumbers


    and mix well. Add drained yogurt and blend. Serve with


    toast points, crackers, or pita bread.

    Grate peeled and seeded cucumber; set aside to drain. Add


    garlic, vinegar, olive oil, salt, and pepper. Pulse with a


    quick on-off. Place in a bowl and combine with cucumber and

    7oz (200g) chick peas





    2 cloves of garlic





    3 tablespoons of olive oil





    1 teaspoon paprika

    one third of a teaspoon of cumin

    Cooking Instructions:





    Place the chick peas in a large bowl and leave to soak overnight





    Boil the soaked chickpeas until soft, then drain and allow to cool





    Place the ground sesame seeds in a bowl and dilute with water





    Put the chick peas in a mixer and while grinding add the ground sesame seeds, salt, garlic, pepper, lemon juice and olive oil





    Continue grinding until the hummus becomes smooth and creamy





    Serve cold sprinkled with paprika and garnished with finely chopped parsley





    LAMB,COUNTRY STYLE








    Ingredients:





    3 lbs. 6 oz. (one and a half kilos) leg of lamb, boned





    1 lb. 2 oz. (500g) round potatoes





    1 lb. 2 oz. (500g) carrots, coarsely cut





    4-5 spring onions, sliced





    11 oz. (300g) peas





    11 oz. (300g) cottage cheese, unsalted





    salt and pepper





    1 lb. 2 oz. (500g) fillo pastry





    1 teacup butter, melted





    one and a half teacups of olive oil





    2 tablespoons of dill, finely chopped





    Cooking Instructions:





    Heat the oil in a pot or saucepan and saut茅 the onions in it





    Add the boned lamb and cook for a further 10 minutes or until the lamb has browned





    Add a sufficient amount of water to allow the meat to boil for one hour





    Add the vegetables and allow everything to boil for a further 20 minutes





    Remove the saucepan from the heat and allow to cool





    Cut the fillo pastry into strips of about 2o cms. in width





    At one end of each strip place a piece of lamb and some vegetables





    To the lamb and vegetable mix add pieces of cheese





    Brush melted butter on the end of the pastry sheets and fold over the lamb and meat to form 'parcels'





    Place the fillo parcels on a buttered oven dish and bake in a medium-oven for about 35-40 minutes





    Serve hot

    Ingredients:





    Biscuit








    2.75lbs (1200gms) all-purpose flour





    2 tbsps. honey





    half a cup of caster sugar





    1 tsp. baking soda





    1 tsp. baking powder

    1 tsp. grated orange rind

    1 tsp. ground cinnamon





    1 cup of ground walnuts





    Cooking Instructions:





    Pre-heat the oven to 350F, Gas Mark 4, 180C)





    Put the sugar, olive oil and honey into a large bowl and beat together





    Add the clove, cinnamon and orange rind and beat in with the other ingredients in the bowl





    Dilute the baking powder and baking soda with the fruit juice then add to the mixture in the bowl along with the walnuts and semolina, beating all the time





    Gradually add the flour to form a soft dough





    Cover the bowl with a damp cloth and allow the dough to stand for at least 30 minutes





    Divide the dough into pieces that will form oblong rounds like small eggs and place on a lightly greased baking sheet





    Cook the biscuits in the pre-heated oven for about 20 minutes or until they are a golden brown in color





    Remove from oven and allow to cool on a wire rack





    To make the syrup, blend together the water, honey and sugar in a saucepan and bring to the boil for about 10 minutes





    Reduce the heat and dip the biscuits in the syrup for about a minute then remove with a perforated spoon and place on a serving plate





    Before serving sprinkle the melomakararona with walnuts and ground cinnamon.

    Feta cheese cut into 1/2 in thick slices


    1 egg


    1 tbsp. milk


    Flour


    Olive oil for pan frying





    Mix egg with the milk. Dip cheese into the egg mixture, then dip into flour. Fry in a bit of oil in a heavy frying pan on medium heat until golden brown. Then turn. Serve with crusty bread or squirt on some fresh squeezed lemon juice.

    THAI CHICKEN STOCK





    Thai chicken stock is the base for Tom Yum Soup

    1 Chicken carcass


    8 to 10 cups water


    3/4 to 1 cup thinly sliced galangal


    6 stalks lemon grass - lower thick portion only, pounded


    10 kaffir lime leaves


    --------------------------------------鈥?br>

    * Place chicken carcass in stockpot





    Add water, galangal and lemon grass





    Roll lime leaves and crush lightly with hand, then add to pot.





    Bring to boil, then reduce heat and simmer 45 minutes to 1 hour. Strain.





    TOM YUM SOUP





    2 quarts Thai Chicken Stock (above)


    1 cup Shrinp, peeled and cleaned


    2 (15 ounce) can Straw Mushroom


    drained and rinsed


    6 to 8 Roasted Thai chilies


    6 tbsp. Fish Sauce


    6 tbsp. Lime juice


    3 tbsp. Chili paste in soybean oil


    4 to 6 Kaffir lime leaves


    To Garnish - Cilantro sprigs





    * Bring Thai Chicken Broth to simmer over medium-high heat in medium pot





    * Add shrimp, mushrooms and chilies, cook until shrim turns pink, about 1 minute

    There aren't that many choices. Honey might have been one, but you ruled it out. Cane juice (can be dried) is used by natural foods manufacturers, but it may be hard to find, and it may be expensive.





    Stevia is a natural sweetener that some people like. It is not artificial, but it is a bit hard to control the degree of sweetness, and it may or may not be an ';exact'; substitute in a recipe.
