Check out www.spain.info. They have a very nice section on Spanish food with a lot of local recipes, including some things like olla podrida (an old Castellano boiled dinner) and paella.
I've made paella for years (in fact just shot an episode of my cooking show based on paella) and love it. You could also try pollo al ajillo (chicken with garlic sauce), fideu脿 (a seafood and pasta paella-like thing), cocido (somewhere between a boiled dinner and a stew), or marmitako (Basque fish stew, usually with tuna). I'm not Spanish at all, but I do seem to like Spanish food a lot. Just remember it's not spicy like Mexican or Caribbean food, but it's quite good in its own right.
I'm not spanish, but I know a little about the food. You could make a ';paella';. It's a rice dish made with shrimp, ham and peas. You can add other seafood items such as clams if you like. It's a complete meal in one pot! And for dessert...the spanish classic ';Flan';. Hope that helped a little.
