most major supermarkets will have veg foods, along with health stores. I don't know where you live, but go to happcow.net, pick your city and it will show you all the vegetarian restaurants in your town as well as stores that have lots of veggie stuff.

Most grocery stores do sell vegetarian foods. I get most of mine at Fred Meyers, Winco, Albertsons and Safeway. I'm sure there must be a health food store in your town. Stop by and check it out. Health food stores have plenty of vegan and vegetarian foods.

special vegetarian health sandwich
Ingredients
1 1/2 tblsp butter
1/2 green pepper, chopped
1/2 small onion, chopped (purple or yellow onion ok)
1/3 of a 10 oz bag of sliced mushrooms or... slice up approximately 3 - 4 oz of mushrooms
1 small can sliced olives (4 - 5 oz, I believe), drained
2 slices of pre-sliced, deli-style swiss chease
1 slice of pre-sliced, deli-style provolone cheese
2 sandwich rolls (hoagies, steak rolls, any sliced sandwich roll)
mayonnaise
lettuce (optional)
tomato (optional)
Directions
Prepare the sandwich rolls by slathering mayonnaise on them. (if you like less mayonnaise than ';slathering';, by all means, use less, or use light mayo if you also prefer.)
Melt butter in large saute pan over med-high heat
Saute green pepper and onion together, until starting to soften
Add mushrooms, breaking the slices up into smaller pieces while doing so
Saute this mixture for another couple minutes until mushrooms start to soften
Now add the sliced olives
Stir it all around a bit, until the olives are heated through
Now divide it into 2 portions, each on one side of the pan
Turn heat to low and put 1 slice of swiss cheese and 1/2 of a slice of provolone cheese over each portion
Let melt and turn off heat.
Using a spatula, slide portions (one at a time) into their respective sandwich rolls. Some may fall out so put it back in!
Now add your preferred amount of lettuce and tomato and dig in!
**NOTE** You can just use swiss cheese, and omit the provolone and it's just as tasty.

Chickpea and Sesame Paste Dip (Hummus bi Tahina)
Homemade Hummus is much, much better than any shop-bought version, unless you are purchasing the freshly made product from a traditional middle-eastern suppler. Truly authentic Hummus is made from peeled chickpeas - not as daunting as it sounds! Makes 1½ cups.
200g dried chickpeas, that's one very heaped metric measuring cup
¼ cup lemon juice
½ teaspoon yellow asafetida powder (to replace two cloves garlic)
6 tablespoons tahini
1 teaspoon salt
Soak the chickpeas in cold water overnight or at least 12 hours. Drain and place the chickpeas in a large saucepan. Cover with cold water, about three times the volume, and bring to a boil. Reduce to a simmer and cook for an hour or until the chickpeas are tender, topping up with water if necessary.
Drain the chickpeas, reserving the cooking liquid. Cool slightly then rub the chickpeas well to loosen the skins. Cover with cold water and the loose skins will rise to the surface. Scoop them off and discard.
Place the peeled chickpeas in a food processor with the lemon juice, asafetida, tahini and half of the salt. Process to a smooth puree, adding some of the reserved cooking liquid if necessary to achieve a smooth result. Add the remaining salt if it needs it.
Bean Curd Dip

Mash the bean curd, then mix with the other ingredients with a whisk or an electric mixer. the dip should have the consistency of sour cream. To prepare in a blender or food processor, combine the ingredients and process until smooth. Refrigerate until ready to serve. Stored in a sealed container, the dip can be kept in the refrigerator for up to a week. Makes 1 1/2 cups.

METHOD
Wash and peel the potatoes. Chop them in small pieces and dredge them with salt, pepper and oregano. Spread them in a baking pan, pour olive oil and lemon juice and bake in medium temparature (180 C) for an hour.
Thick and Hearty Split Pea Soup
(printer-friendly version)
2 medium onions, chopped
2 cloves garlic, minced
3 carrots, diced
3 ribs celery, chopped
2 cups dried split peas, checked carefully for debris and rinsed
6-8 cups water
2 medium potatoes, coarsely chopped
1 large bay leaf
1/2 teaspoon celery seed
1 teaspoon dried basil
1 teaspoon dried thyme
1-2 teaspoons liquid smoke
2 teaspoons salt (or to taste)
freshly ground black pepper, to taste
Lightly spray the bottom of a pressure cooker or Dutch oven with canola oil. Sauté the onions for about 5 minutes, scraping the bottom of the pan often, until they begin to caramelize. Add the garlic, carrots, and celery and cook for 2 more minutes.
Add the peas to the pot. If you're using a pressure cooker, add 6 cups of water; for regular cooking, add 8 cups water. Stir in the potatoes, bay leaf, celery seed, basil, and thyme.

Google ';vegetarian recipes'; online and you will get a TON of good options. There is a lot you can do with beans, tofu, chick peas...etc. It's all good. Also, stores like Whole Foods and Trader Joe's who specialize in organics tend to have a lot of vegetarian items.

Sweet acorn oe butternut squash. I can't remember if the summer squash is steamed or baked though, but you put a little butter or spread in the center of a half %26amp; a spoon or 2 of brown sugar.
Succotash, just cook limabeans %26amp; corn in a pot %26amp; mix them together with salt %26amp; a little granulated garlic. It tastes great.
You can steam baby carrots %26amp; coat them in honey %26amp; butter.
Dice up a few brown, red, %26amp; yellow potatoes, put them in a casserole dish, coat them in olive oil %26amp; italian seasonings like onion powder, ralic powder, oregano, basil, parsely, thyme, marjoram, salt, white pepper, etc, %26amp; roast them until they're crispy on the outside.
Steamed artichoke with whole sliced garlic. They're sweet, so you really don't need mayo or any seasonings.
Roasted asparagus with melted parmisan cheese %26amp; garlic.
Baked breaded zuchinni.
Artichole %26amp; spinach dip.
Chopped jicama with diced water chestnuts.
3 bean salad with berry vinegarette.
You can also make lentil %26amp; veggie soup. I prefur Sweet Red Lentil (it's more of a desert, like Azuki Bean Soup) or Italian Lentil with Wine (which smells a bit like maranara sauce) myself.
